Banneton Use and Care
New Banneton baskets need to be conditioned for optimum use. Conditioning takes place over the course of at least three uses. After these three uses, your banneton will have proper build up of flour and moisture so that your dough doesn't stick. Once conditioned, your dough will glide smoothly when removed from the banneton.
